This simple and delicious raita is made with chilled thick yoghurt, beetroot and a very few spices. It's a perfect accompaniment in summers to a spicy dish, pulao or parathas.

This simple and delicious raita is made with chilled thick yoghurt, beetroot and a very few spices. It's a perfect accompaniment in summers to a spicy dish, pulao or parathas.
Cooking Instructions

Firstly, whisk yoghurt in a big mixing bowl. Add grated beetroot, salt, sugar, raita masala or chaat masala, coriander and mint leaves. Mix well and keep aside.

Now heat oil in a small pan.

Add mustard seeds.
- 4
As mustard seeds splutter, add green chillies and curry leaves. Fry for few seconds.

Pour this tempering on beetroot and yoghurt mixture. Mix well.

Garnish with coriander and mint leaves. Serve this delicious raita as an accompaniment to a spicy dish, pulao or parathas.
