Ingredients

4 servings
  1. 1 cupthick and chilled yoghurt
  2. 1medium sized beetroot, grated
  3. 2-3mint leaves finely chopped
  4. 1 tbspfinely chopped coriander
  5. as neededBlack salt
  6. 1/4 tspchaat masala or raita masala
  7. 1 tspsugar
  8. 1green chilli finely chopped
  9. 3-4curry leaves
  10. 1/4 tspmustard seeds
  11. 1 tspoil

Cooking Instructions

    Firstly, whisk yoghurt in a big mixing bowl. Add grated beetroot, salt, sugar, raita masala or chaat masala, coriander and mint leaves. Mix well and keep aside.

    Now heat oil in a small pan.

    Add mustard seeds.

  4. 4

    As mustard seeds splutter, add green chillies and curry leaves. Fry for few seconds.

    Pour this tempering on beetroot and yoghurt mixture. Mix well.

  6. 6

    Garnish with coriander and mint leaves. Serve this delicious raita as an accompaniment to a spicy dish, pulao or parathas.
