[年菜料理]紅燒烤麩 免油炸
江浙年菜不可或缺的紅燒烤麩,在傳統作法是一定要油炸至酥脆,其實也可以中小火均勻煎酥再入鍋熬煮,燒煮後Q軟度也蠻不錯的。
料理步驟
- 1
烤麩因為是發酵麵製品比較容易敗壞,所以購買前應該要聞一下氣味,若是有酸氣就不建議食用,買回來若是沒有馬上煮需要冷凍保存。

一般是捏不規則狀,因為要用半煎炸所以切成規矩的長方形,比較能四面都煎到。
要煎到乾脆,燒好後口感才不會糊爛。 - 3
毛豆仁先泡冷水將薄膜去除,水燒滾小煮8-10分鐘,瀝乾備用。

一般是加入新鮮筍塊,我用杏鮑菇替代,不要切太薄,以免不脆口。

爆香洋蔥、薑片和香菇後放入杏鮑菇和烤麩拌炒均勻,加入醬油拌炒後加入香菇水和水與適量冰糖,煮滾後小火燒15分鐘,須注意水分,別燒太乾,含點醬汁比較好吃。

接著放入木耳片和胡蘿蔔片,續煮五分鐘,依個人喜好調整鹹度,最後加入毛豆仁拌炒後即可起鍋。
