Ingredients

  • 2 cupsfresh fig puree
  • 2 tspbaking powder
  • 1/2 tspbaking powder
  • 1/2 tspsea salt
  • 1 cupbrown sugar
  • 1large egg
  • 1 tspvanilla extract
  • 2 cupsfresh ground whole wheat flour
  • 2 tspcinnamon powder
  • Additional brown sugar

Steps

  1. 1

    Mix fig puree, egg, brown sugar and vanilla. Mix set aside.

  2. 2

    Combine baking powder, baking soda, salt, cinnamon, whole wheat flour. Mix well set aside.

  3. 3

    Slowly add dry ingredients to wet ingredients. Mix until combined. Don't over mix.

  4. 4

    Butter the muffin pan well. Scoop batter into muffin pan. Sprinkle brown sugar on muffins before baking. Bake 375°F 15 to 25 minutes, depending in the muffin size. Toothpick inserted in the center needs to be clean.
