I love tomatoes at this time of year and this salsa goes with just about everything. I served on chickpea doubles (recipe to follow) but it’s great with tacos or just in a sandwich.

I love tomatoes at this time of year and this salsa goes with just about everything. I served on chickpea doubles (recipe to follow) but it’s great with tacos or just in a sandwich.

Wash and dry the tomatoes, cut a small cross on the top, place on a baking tray and roast with the garlic and chilli In a hot oven or bbq until the skins are slightly black and the tomatoes and garlic are soft

Remove the tomato skins and mash together with the garlic and lemon juice. Chop the chilli and mix or place in the centre if everyone does not like it hot. Add salt to taste.
