Came up with this recipe on a whim. A West coast alternative to Louisiana rice. Made to use as a bed for for a basic boil with corn on the cob, potatoes, shrimp and keilbasa sausage.

Came up with this recipe on a whim. A West coast alternative to Louisiana rice. Made to use as a bed for for a basic boil with corn on the cob, potatoes, shrimp and keilbasa sausage.

Ingredients

6 servings
  1. 1 tablespoonbacon fat
  2. 1/2sweet onion, diced
  3. 2 clovesgarlic, sliced
  4. 1 cupwhite rice
  5. 2 cupsmushroom broth
  6. 1/2 teaspoonpaprika
  7. 1/2 teaspoonchili powder
  8. 1 teaspooncoffee garlic BBQ seasoning

Cooking Instructions

    In a large skillet, heat bacon fat over medium high heat. Add the onion, garlic and dry rice. Stir every 2-3 minutes until the onions look clear and the rice looks gokden in color and dry.

    Add the paprika, chili powder and BBQ seasoning to the rice and stir.

    Reduce heat to medium low and add the mushroom broth. Cover or transfer rice to a pot to simmer. Once the rice looks like it absorbed most of the water, remove from heat.

    Allow to sit 10 - 15 minutes before serving.
