Ingredients

  1. 1 tablespoonDijon mustard
  2. to taste Ground pepper
  3. 1 teaspoonLemon or white wine vinegar
  4. 5large or 10 small Capers
  5. 6large or 8 small Anchovy fillets
  6. 5Walnut kernels
  7. 1 teaspoonNutmeg
  8. 1 teaspoonWorcestershire sauce
  9. 1Egg yolk
  10. 2 pieces(about 200g each) Filet steak
  11. 4Basil leaves
  12. 4Sage leaves
  13. 23 gParsley or chervil
  14. 23 gFresh tarragon leaves
  15. 1medium Shallot
  16. 200 gUnsalted butter
  17. 200 gFrench fries

Cooking Instructions

    Melt 50g butter in a saucepan over low heat. Add chopped shallot and cook until translucent.

    Add remaining butter and melt completely over low heat.

    In a blender, combine butter-onion mix, tarragon, parsley, sage, basil, anchovies, nutmeg, walnuts, capers, and pepper. Blend until smooth.

    In a bowl, whisk egg yolk, mustard, Worcestershire sauce, and vinegar.

    Gradually mix the herb butter into the egg mixture, whisking to a thick, mayo-like texture.

    Heat 2/3 of the sauce in a saucepan until slightly crumbly, then remove from heat and wait 30 seconds.

    Mix heated sauce with the unheated portion and whisk well.

    Cook filet steaks to your preferred doneness and slice.

    Serve filet with sauce and fries on the side.
