Combination of mushroom with rice is healthier and also tastier, hence people who watch diet does not have to subside their cravings and they can just relish this decadent dish.
This Biryani recipe is a quicker compared to the usual, but its equally aromatic and delectable. Mushrooms does not need any marination and separate long cooking process. Favourite with my kids and family.

Cooking Instructions

Wash and soak brown rice for 10 minutes.

While rice is soaking you can chop all your vegetables and keep ready all the other required items.

Heat 2 teaspoons of oil in a pressure cooker, add all the whole spices.

Add the carrots, beans and green peas and saute for 2 minutes

Add salt and other masalas mentioned for biryani. Add 1-3/4 cups of water and boil for 2 minutes. Cover the cooker lid and take 1 whistle.

Rice is ready let's prepare the tempering in a pan.

In another pan heat oil add chopped cashews and sliced onions and saute.

When onions turn slightly golden add chopped mushrooms and saute till they change colour. Add spices and salt mentioned in tempering section.

Add the cooked rice and mix. The biryani is ready below 20 minutes. I prepared for my son and daughter's lunch box at 7 am in the morning.

Was going through some old saved magazine recipe clippings, and ran across this one called American Biryani. Thought I would try it. It's pretty good. Can't wait to try it with sage and rosemary! It takes awhile but it's worth the time and effort. This recipe as is makes quite a bit, my dutch oven was about 2/3 full, I just don't recall if it is a 5 or 6 quart pot. I'm doing a half recipe next time. You shouldn't be limited to chicken, I see no reason why any meat would not work, but whatever meat you use, leave some fat on it, as the fat truly does add flavor. I made it at home to celebrate the anniversary of the day I left India.Basmati rice is ideal, but if you are using regular white rice, make sure to cook it so it's firm since it will be steamed with the chicken in Step 16.When serving on a plate, combine the chicken sauce on the bottom of the pan with the rice evenly.This is even better when served with tomato onion raita or chukauni.
