Brown rice and Mushrooms are low in carbs, low in calories, rich in fibres, has more nutrition, many essential Vitamins, rich in protein and minerals and keeps one going for a longer time.
Combination of mushroom with rice is healthier and also tastier, hence people who watch diet does not have to subside their cravings and they can just relish this decadent dish.
This Biryani recipe is a quicker compared to the usual, but its equally aromatic and delectable. Mushrooms does not need any marination and separate long cooking process. Favourite with my kids and family.

Wash and soak brown rice for 10 minutes.

While rice is soaking you can chop all your vegetables and keep ready all the other required items.

Heat 2 teaspoons of oil in a pressure cooker, add all the whole spices.

Add the carrots, beans and green peas and saute for 2 minutes

Add salt and other masalas mentioned for biryani. Add 1-3/4 cups of water and boil for 2 minutes. Cover the cooker lid and take 1 whistle.

Rice is ready let's prepare the tempering in a pan.

In another pan heat oil add chopped cashews and sliced onions and saute.

When onions turn slightly golden add chopped mushrooms and saute till they change colour. Add spices and salt mentioned in tempering section.

Add the cooked rice and mix. The biryani is ready below 20 minutes. I prepared for my son and daughter's lunch box at 7 am in the morning.
