Ingredients

  • 300 geggplants
  • 50 mlvegetable oil
  • 150 gbreadcrumbs
  • 300 gham
  • 250 gmozzarella cheese
  • To tastesalt

    Slice eggplants into pieces about 1 cm thick and lightly salt them.

  2. 2

    After 5 minutes, remove excess juice with napkins.

  3. 3

    Dip each slice on both sides in vegetable oil.

  4. 4

    Immediately coat in breadcrumbs.

  5. 5

    Place slices on a baking tray lined with parchment paper.

  6. 6

    Top each slice with thin slices of ham.

  7. 7

    Add mozzarella on top. For a kids’ version, this is enough.
    For a richer taste, add some gorgonzola or blue cheese.

  8. 8

    Sprinkle a small amount of breadcrumbs for a crispy crust.

  9. 9

    Bake in a preheated oven at 200 °C (392 °F) for 15–20 minutes.
