Ingredients

  1. 1/2small ripe avocado peeled
  2. 2 tablespoonsmayonnaise
  3. 1/2 teaspoonlemon juice
  4. 2 tablespoonscrumbled Gorgonzola cheese
  5. 4 slicesItalian bread toasted
  6. 11/2 cupsfresh baby spinach
  7. 4tomato slices
  8. 4thick-sliced applewood smoked bacon strips,cooked

Cooking Instructions

  1. 1

    Mash avocado with a fork;stir in mayonnaise and lemon juice.

    Gently stir in cheese.

  3. 3

    Spread over toast.

  4. 4

    Top two of the slices with spinach,tomato,bacon and remaining slices of toast
