Ingredients

  • 1/2small ripe avocado peeled
  • 2 tablespoonsmayonnaise
  • 1/2 teaspoonlemon juice
  • 2 tablespoonscrumbled Gorgonzola cheese
  • 4 slicesItalian bread toasted
  • 11/2 cupsfresh baby spinach
  • 4tomato slices
  • 4thick-sliced applewood smoked bacon strips,cooked

Steps

  1. 1

    Mash avocado with a fork;stir in mayonnaise and lemon juice.

  2. 2

    Gently stir in cheese.

  3. 3

    Spread over toast.

  4. 4

    Top two of the slices with spinach,tomato,bacon and remaining slices of toast
