Soak the shiitake mushrooms in hot water until soft, then dice them. Marinate the ground pork with all the seasonings (except mushrooms, shallot, and garlic) for 10 minutes.

To make the meat sauce: Heat oil in a pan, add the shallot and minced garlic, and sauté until fragrant. Add the mushrooms and cook until aromatic, then add the marinated pork and stir-fry. Add a little water to make a sauce if needed. The meat sauce is ready!

To cook the noodles: Bring a pot of water to a boil and add 1/2 teaspoon salt. Add the ban mian noodles and cook until done. Drain and rinse with cold water (for a chewier texture, optional), then briefly rinse with hot water. Place the noodles in bowls.

Top with poached eggs (see separate instructions if needed), dried shrimp chili (see separate instructions if needed), crispy fried anchovies, and meat sauce. Enjoy!
