Potato Cutlet or Aloo Tikki

Boil and mash potatoes and add all the ingredients except egg and crumbs. Give them cutlet shape, dip in egg then in crumbs. Shallow fry on medium heat until golden brown. Serve these with chutny and salad.
For rainbow salad finely slice as many colored veggies as you want. Use your choice of dressing. I usually add simple dressing like apple cider vinegar, black pepper, salt and a little brown sugar.
