  • 2 cupsdried chickpeas, soaked overnight
  • Small bunch of parsley
  • 1onion
  • clovesGarlic
  • Salt
  • Hot pepper
  • 1 tablespoonground coriander
  • 1 tablespooncumin
  • 1 tablespoonsesame seeds
  • 1 teaspoonbaking powder
  • 1 teaspoonbaking soda
  • Water
  • Black pepper
  • Oil for frying
  • slicesTomato
  • Chopped parsley
  • Pickles
  • Tarator sauce:
  • 1/4 cuptahini
  • Juice of 1 lemon
  • Salt
  • Water
  • Hot pepper

Steps

  1. 1

    In a blender, grind the chickpeas, parsley, onion, and garlic. Then add the spices and mix well. Let the falafel mixture rest in the fridge for 1 to 1.5 hours.

    After resting, add the baking powder and baking soda, and start frying using a special tool. If unavailable, use an ice cream scoop. For more details, visit https://youtu.be/zSL3D6igj7k

    Note: The oil must be heated well on high heat, then reduce the heat when you start frying.

    For the tarator sauce, mix lemon juice with tahini, salt, and pepper, and gradually add water.

  5. 5
