A pasta sauce that is suitable for people with GERD and also people who like to up their intake of vegetables. Use in as a pizza sauce, in pastas or in soups or stews.
Steps

Thinly slice the ginger and leek and add them to a large pot with the olive oil. Sauté for a couple of minutes until softened.

Add ground spices and cook for a minute or two.

Peel and finely chop all vegetables and add them to the pot. Alternatively use a food processor with the grader. On a low heat, sauté the vegetables until softened.

Add crushed tomatoes and passata along with 2 cans of water (use tomato cans).

Simmer until everything has softened.

Take off the heat and add in the fresh basil.

Use a food processor or blender to form a smooth sauce.
