Ingredients

4 servings
  • 1-1/2 kgbrinjal
  • 2-3potatoes
  • 3-As desired salt
  • 4-1 tspred chilli powder
  • 5-1/2 tsphaldi
  • 6-1knorr cube
  • 7-4 tbspoil
  • 8-1 tspzeera
  • 9-4green chillies
  • 10-2tomatoes
  • 11-1onion
  • 12-1 tbsplemon juice
  • Brinjal raita
  • 1-2small brinjal
  • 2-1capsicum
  • 3-1 cupyogurt
  • 4-1/2 tspsalt
  • 5-1/2 tspred chilli powder
  • 6-1/2 tspbhuna zeera
  • 7-1/2 tspblack pepper
  • 8-1small tomato
  • 9-2chopped green chilli
  • 10- little fresh dhania

Steps

  1. 1

    For making boat take a long brinjal and cut it horizontally and cut both ends to make a shape of a boat.

  2. 2

    Take oil in a pan and shallow fry the half brinjal carefully not to break it.

  3. 3

    Scoop out the inner part and keep aside.

  4. 4

    Fry onion in oil. Make it brown.

  5. 5

    Add zeera and potatoes cut in cubes.

  6. 6

    Fry potatoes in onions for 5 minutes.

  7. 7

    Now add salt, pepper, red chilli powder, haldi, cube, tomato and yogurt.

  8. 8

    Wash and cut brinjal like small size French fries. Add in potatoes.

  9. 9

    Cover it and cook till potatoes are done. Don’t over mash brinjal

  10. 10

    Add lemon juice and fill brinjal potatoes in brinjal boat.

  11. 11

    For brinjal raita. First apply oil on all sides of brinjal and keep whole brinjal to cook directly on stove.

  12. 12

    When it is black from all side put it in water and carefully peel the skin.

  13. 13

    Now mash the pulp of brinjal with fork and add chopped tomato, green chillies and onions in a pulp.

    Beat yogurt well and add salt, red chilli powder and zeera.

  15. 15

    Add brinjal pulp in yogurt and mix well.

  16. 16

    Wash and cut the upper part of capsicum and scoop out the seeds.

  17. 17

    Fill the brinjal raita in it and serve with brinjal boat and garlic or plain boiled rice,

It’s really good to see my husband and kids happy because they love the food that I cook . I genuinely enjoy the whole process of cooking & love to hosting and design menus too. For me cooking is highly creative hobby to take up . You can not only create your own dishes but blend your favourite cuisine , it’s totally your choice because it’s your kitchen and your family. I am blessed to be surrounded by beautiful family who always appreciated me and love my cooking skills ❤️❤️❤️
