Ingredients

  • 1 TblsDark Soy sauce
  • 1/2 TspHot Chilli Powder
  • 1/4Salt
  • 1 tblsCornflour
  • 1 tspfinely grated and peeled fresh root Ginger
  • 2Garlic cloves finely cut
  • 1 TblsMalt Vinegar
  • 1 TblsTomato Purèe
  • 1 TspDemerera Sugar
  • 2 TblsVeg oil
  • 1medium onion finely Chopped
  • 2Boneless, Skinless chicken breasts cut about 1 inch thick
  • 2Green finger Chillies slit lengthways
  • 1/4 TspGround white pepper
  • 4Spring onions sliced
  • Rice.............
  • 2 CupsWhole grain rice
  • 1 tspTumeric enough water so as its an inch above the rice
  • 1Dried Veg Stock

Steps

    At least 45 minutes ahead mix together, soy sauce, Chilli powder,Salt, Cornflour, Ginger,Garlic,Vinegar,Tomato Purèe and Salt.

    Heat 1 tbls of the oil in a heavy based pan then when hot add Onions on medium heat fry until transparent in colour. Take off the heat and mix in the marinade.

    Next add the chicken to the mix too and cover put in the fridge for at least half an hour.

    Heat the pan up with the other tbls veg oil. Add the green chillies and white pepper and fry over a low heat for 1 minute.

    Next add the marinated chicken and onions to the pan, most of the mixture will have been soaked in the chicken and fry for 10 minutes until the chicken is cooked. Garnish with spring onions.

    Cook the rice add the veg stock for a little flavour and tumeric for colour.

    Add a little oil to the pan and add the marinated chicken and onion, fry on medium for 15-20 minutes until soft and cooked.

    Serve on Rice with spring onion for garnish.

Cookpad founder Member Ambassador, Also a Cookaholic.I love this Cookpad Site, Recipes, friends, interesting people and outstanding recipes, and able to see and to taste food from all over the world. i have learned so much more here, spices , herbs and lovely recipes of different cultures. also experimenting mixing different herbs and spices and making my own creations .I have cooked for my family since I was 14yrs, home from school as my Grandmother could no longer cook she was 91yrs, my Dad worked and there was only me so I learned quite quick and have always enjoyed it. I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
