Falafel is a deep-fried ball or patty that is made from chickpeas or fava beans and spices. It is vegetarian food and is one of the most widely consumed and recognized
Cooking Instructions

Soak chickpeas and fava beans in water overnight

Start by draining the fava beans & chickpeas well, and grind in the food processor.

Next grind the cilantro, onion, garlic, & add to the ground mixture of chickpeas & fava beans.

Add all the spices and baking powder, and mix the very well.

10 minutes prior to frying falafel add the baking soda, and mix well.

Using a special falafel mold start scooping the falafel mix into appropriate size tablets as needed

Meanwhile in a large skillet, heat a sufficient amount of vegetable oil for deep frying.

Then start immersing the falafel scoops in the hot oil.

Flip over a couple of times until both sides are golden brown and crunchy on the outside.

Remove from oil and place in a strainer to remove any excess oil.

Falafel is served hot with tahini sauce, tomato slices, and pickles.
