Ingredients

  1. 1 1/2medium size loaves of lebanese bread (chop into cubes)
  2. 2 cupsboiled chickpea
  3. 3 cupsyogurt
  4. 3 tbsTahini sauce
  5. 3garlic gloves (finely crushed)
  6. 1/2 tspsalt
  7. 3 tbslemon juice (optional)
  8. 1/4 cupchickpea broth (as needed)
  9. vegetable oil to fry the bread
  10. or 1 tbs of ghee to bake it in the oven
  11. To garnish:
  12. 2 tsppine nuts fried in ghee or butter
  13. 1 tbsfinely chopped parsley
  14. 1 tbsghee or butter

Cooking Instructions

    Bread preparation:

    heat the oil and fry the bread cubes until they are crunchy and golden. Place on a paper towel

    Or... In a tray, brush the bread cubes with butter, and toast in a hot oven on 180°

    Yogurt preparation:

    in an bowl, mix yogurt,Tahini, crushed garlic, salt, and the lemon juice until well consistent, smooth and dense

    You may add some of the chickpea broth to reduce the thickness of yogurt if you desire

  5. 5

    Serving method:

    In an serving dish, place a layer of fried or toasted bread cubes, spread the chickpea on top (you may pour some of chickpea broth as well). Pour the yogurt mixture, garnish with finely chopped parsley and fried pine nuts.

    Serve immediately
