Gluten free pancakes (Crepes)
Steps

Sift the dry ingredients (gluten-free cake flour, xanthan gum, baking powder and salt) together into a bowl.

Add the water and mix well, ensuring there are no lumps. Note: the mixture will thicken and have a jelly texture.

Add remaining ingredients (egg, lemon juice and oil) and mix well.

Grease and preheat frying pan over medium to high heat.

Place thin layer in frying pan cook until golden brown.
- 6
Turn over and cook the other side until golden brown.
- 7
Add your favourite sweet or savoury topping and enjoy.
