I recently filmed a Halloween piece for local channel Bristol TV and was wanting to use up some egg whites. I always seem to have a few from when I make carbonara! SO my idea started with making ghosts but when I got to shaping them with a spoon they looked more like 'scream' faces...and here we are! Ingredients

1.5 hours and cooling time
approx 16 servings
  1. 3egg whites
  2. 170 gsugar
  3. 1 tspcornflour
  4. 1 tspwhite wine vinegar
  5. Pinchsalt
  6. Optional sugar eyes (Waitrose)

Steps

1.5 hours and cooling time
  1. 1

    In a bowl, whisk egg whites to stiff peaks using a handheld whisk or food mixer.

  2. 2

    Continue whisking adding 1 dessert spoon of sugar at a time and fully incorporating it in.

  3. 3

    When all the sugar is added, add the cornflour and vinegar and mix for a second with the mixer.

  4. 4

    Spoon a tablespoon of mixture onto a lined tray, making a tear drop shape.

  5. 5

    Make eye and spooky mouth holes with the spoon! (See video link for tips) Push in eyes if using!

  6. 6

    Bake for 1 hour at 140 degrees, then 1/2 hr at 120 degrees. Turn off the oven and leave to cool with the oven door ajar. (

  7. 7

    These make delicious crunchy on the outside, soft and mallowy on the inside meringues. A trick and a treat!!
