Today, enjoy this delicious and simple dish, a classic of Mexican cuisine.

Cut the pork into thin strips, season with salt and pepper, and set aside.

Slice the bell peppers and onion into thin strips.

Heat a drizzle of olive oil in a skillet, and sauté the pork for about 5 minutes. Add the onion and continue to sauté for another 5 minutes, stirring occasionally. Then add the bell peppers and oregano, and cook for another 5 minutes. Once done, remove from heat and set aside.

Wipe the skillet clean, add a drizzle of olive oil (about 1 tablespoon), and quickly fry the tortillas for 1 minute on each side. Work quickly for this step.

It's best to have the green salsa prepared ahead of time and kept hot.

To assemble, place some of the pork and pepper filling and a little shredded white cheese on each tortilla. Roll up the tortilla and place it seam side down. Repeat with all tortillas.

To serve, spoon about 2 tablespoons of hot green salsa onto a plate, place two enchiladas per person on top, and add more salsa over them. Top with a little sour cream, crumbled white cheese, and a few cilantro leaves for garnish. Enjoy! These enchiladas are delicious.
