Ingredients

  • 1 tincoconut milk (400ml)
  • 400 gwhite rice
  • 400 mlwater
  • 1 tspsalt
  • 8spring onions thinly sliced
  • 1-3chillies finely minced
  • 1/2white onion finely minced
  • 4-6 clovesgarlic (minced)
  • 1/2 tspginger
  • 1/2 tspallspice
  • 1/2 tspcinnamon
  • 1star anise
  • 50 gdessacated coconut (optional)

Steps

  1. 1

    Saute the onion, garlic and chillies on a low heat until aromatic.

  2. 2

    Add the coconut milk, water and salt to the pan and bring to a simmer.

  3. 3

    Once simmering add all the spices and bring to a boil.

  4. 4

    Once boiling add the rice and cook for 8 - 12 minutes or until the rice is cooked through.

  5. 5

    Stir in the dessacated coconut and spring onions, strain off any excess liquid and plate up.
