Potato & cheese omelette

Cooking Instructions

Peel your potato and dice into small cube. Rinse under a tap and add 1tsp of butter, crushed black pepper and sprinkle a little salt over it, cover with cling film and cook in the microwave for 2 mins.

In the frying pan add the cooked potato and fry for 2 mins, add more butter if necessary. Add the onions and chilli and fry for 1 min. Turn off heat.

In a medium bowl crack the eggs and add the cooked potato mixture. Add the rest of the seasoning and stir well till the egg mixture is well incorporated.

Pour the mixture back into the frying pan(make sure the frying pan can be used in the oven)

Sprinkle cheese over the egg and place it in an oven for 7 mins. Oven temperature should be 180 degrees.
