Choose pork chops with a little fat and slice them very thin, like fillets. Marinate with crushed garlic, sliced shallot, 3 tablespoons soy sauce, 1 tablespoon chili paste, and pepper. Mix well and let sit for 30 minutes to absorb the flavors.

Heat a pan and sauté the garlic and shallot. Spread the pork slices in a single layer and cook, flipping to brown both sides. The meat cooks quickly, so use medium heat and be careful not to burn the garlic. Cook for about 10 minutes, then add the green onion tops and finish.
