Ingredients

  1. 1.5 CupsQuinoa
  2. 1Large Zucchini
  3. 2Large Carrots
  4. 2Large Capsicum
  5. 1Large cucumber
  6. 1Large Red Onion
  7. 2Lemons
  8. 1 BlockFeta
  9. 2 cansChickpeas
  10. Paprika
  11. Cardamom
  12. Cloves
  13. Chilli flakes
  14. Ginger
  15. Cayenne pepper
  16. Salt and pepper

Steps

  1. 1

    Finely dice all the vegetables

  2. 2

    In a pan with olive oil, fry 2/3 of the garlic, the zucchini and carrot until soft

  3. 3

    Crumble Feta, zest both lemons and juice one in a bowl

  4. 4

    Combine the rest of the ingredients.
