Ingredients

  • 1.5 CupsQuinoa
  • 1Large Zucchini
  • 2Large Carrots
  • 2Large Capsicum
  • 1Large cucumber
  • 1Large Red Onion
  • 2Lemons
  • 1 BlockFeta
  • 2 cansChickpeas
  • Paprika
  • Cardamom
  • Cloves
  • Chilli flakes
  • Ginger
  • Cayenne pepper
  • Salt and pepper

Steps

  1. 1

    Finely dice all the vegetables

  2. 2

    In a pan with olive oil, fry 2/3 of the garlic, the zucchini and carrot until soft

  3. 3

    Crumble Feta, zest both lemons and juice one in a bowl

  4. 4

    Combine the rest of the ingredients.
