Shahi Veg Kolhapuri with Amla

I made Veg Kolhapuri in a completely different way by using amla (Indian gooseberry), which is not usually included because of its tartness. However, I used khoya (milk solids) to balance out the tart flavor of the amla. To make it royal, I also added dried fruits and nuts.

Steps

First, heat a little oil or ghee and sauté the amla and all the vegetables one by one.

Sauté all the dried fruits and nuts, then set aside.

In a pan, heat the remaining oil or ghee.

Add shahi jeera and sauté, then add the ginger and green chili paste and stir.

Add the grated coconut, white pepper powder, turmeric powder, and salt to taste. Add the khoya and sauté.

Now add a little water, then mix in the sautéed vegetables, amla, and dried fruits and nuts.

Finally, add garam masala and chopped cilantro, then serve.
