Ingredients

40 minutes
4 servings
  1. For Bhaji-
  2. 2 tbspButter
  3. 3tomatoes finely chopped
  4. 1/4 cupfresh Green Peas
  5. 1/2 cupcapsicum finely chopped
  6. 2Potato boiled and mashed
  7. 1 tspsalt
  8. 1 tsp+1/4 tsp red chilli powder
  9. 1/4 tspturmeric powder
  10. 1 tsp+1/2 tsp Pav Bhaji masala
  11. 1 tsp+ 1 tsp dry fenugreek leaves
  12. 2 tbsp+ 1 tbsp chopped coriander leaves
  13. 1 tspGinger-Garlic paste
  14. 1onion finely chopped
  15. 1/2lemon juice
  16. as required Water to adjust the consistency
  17. 3 dropsred food colour (optional)
  18. To toast Pav-
  19. 8Pav / bread roll
  20. 4 tspbutter
  21. 1/2 tspred chilli powder
  22. 1/2 tspPav Bhaji masala
  23. 4 tspcoriander leaves finely chopped

Steps

  1. 1

    Firstly in a large Kadhai or pan heat 1 tbsp butter and add 3 tomatoes, 1/4 cup peas, 1/2 cup capsicum, boiled potatoes and salt saute for 2 minutes.

    Now add 1/2 cup water mix well. Then cover and boil for 10 minutes.

    After mashing the vegetables smoothly making sure there are no lumps.

  4. 4

    Now add 1 tsp chilli powder, 1/4 tsp turmeric powder, 1 tsp Pav Bhaji masala, 1 tsp Kasuri methi (dry Fenugreek leaves) and 2 tbsp coriander leaves.

    Then saute for a minute making sure the spices are cooked well.

    Next, stick the prepared vegetables mixture to sides of the pan and create space at the center of kadhai.

  7. 7

    Heat a tbsp of butter add 1/4 tsp chilli powder, 1/2 tsp Pav Bhaji masala and 1 tsp dry fenugreek leaves.

    Also add 1 tbsp coriander leaves, 1 tsp Ginger-Garlic paste, 1 onion and 1/2 lemon juice. Saute well making sure the onions are cooked well.

    Now add 3 drops food colour and mix well. Further add 1/2 cup water or as required adjust consistency.

    Furthermore, boil and mash for 5 mins till Pav Bhaji turns smooth and silky texture. After off the flame.

    Now prepare the Pav by heating 1/2 tsp butter, pinch of Chilli powder, Pav Bhaji masala and coriander leaves mix well.

    Now slit 2 Pav in center and roast with spiced butter. Roast both sides of Pav till they turn slightly warm.

    Finally serve Easy Mumbai style Pav Bhaji with some chopped onions, coriander, lemon, butter and sev mixture.

    Notes:- Pav Bhaji is Prepare with butter for more street flavours, also add vegetables of your choice to make it more nutritious. Mash the Bhaji well to get smooth silky consistency.
