Set oven to 400° Start with all the ingredients premeasured. The following steps happen quick and you need to have everything ready. Also have a hand mixer on standby.

Combine water, butter, and salt in a small sauce pan and bring to a boil.

As soon as the mixture reaches a full bubbling boil, immediately remove from heat and add flour. Stir in flour until a dough forms and pulls of the sides of the pan.

Pour in the beaten eggs and combine with the hand mixer until the dough is smooth. It should have a consistency to brownie batter.

Using two spoons or a cookie scooper, drop 1inch balls of the mixture onto an ungreased cookie sheet. Leave at least an inch between puffs.

Cook in the oven for 30-40 mins until the tops of the puffs have turned a golden brown. When you take the puffs out of the oven you should be able to tap the tops of them and the feel rigid.

Remove the puffs off the cookie sheet soon after taking them out of the oven or they will stick to the pan.

For the filling, make whatever you desire, it could be a thicker pudding mix, it could be a pastry creme mix.

Put the filling in a piping bag with a metal tip. Use the tip to poke into the puff either in the bottom or a thinner area on the side of the puff. Fill the puff until you can see it expand slightly.

If you'd like, frost the top or sprinkle some powdered sugar over it.
