I went home and my mom gave me a bag of tomatoes and some pork. This salad went so well with the pork. It’s great for summer. I made it and “sat” it in the fridge for 2 hours so the flavours would marry. It’s pretty simple too.

  • 1 handfulcoriander chopped
  • 2feta rings chopped

  • 1tblsp olive oil

I believe in quick, full of fibre meals. I love vegetables. I cannot cook for one. Rocket is my favourite herb. Beef is the winner but I’ve drastically cut down.Health is wealth (I try)Again, I believe in quick meals.
