Ingredients

15-20 mins
4-5 servings
  1. 500 gramsPenne Pasta
  2. 2Onions, finely chopped
  3. 8-10Garlic Cloves, finely chopped
  4. 1/4 th teaspoonginger, grated
  5. 12Red Tomatoes, roughly chopped
  6. 3/4 teaspoons(or to taste) Red Chilli Powder
  7. 1.5 teaspoons Oregano Seasoning
  8. 1 teaspoonGaram Masala Powder
  9. 4-5 teaspoons(or to taste) Schezwan Sauce - She prefers Chings
  10. 2 tablespoonsHot and Sweet Tomato Sauce (we use Maggi)
  11. 2 tablespoonsOlive Oil
  12. to tasteSalt
  13. 2Cheese Cubes, grated
  14. as requiredWater

Steps

  1. 1

    Boil the pasta in sufficient water, adding a pinch of salt and 1 teaspoon oil for 6-8 mins or till done.

    Drain the cooked pasta, rinse under running water, allow it to cool. Set aside.

  3. 3

    Add the tomatoes to a mixer jar, add 4-5 garlic cloves. Blend into a smooth puree. Set aside.

  4. 4

    Heat the olive oil, add the chopped garlic cloves and the ginger, saute briskly until it turns golden brown.

  5. 5

    Add the onions, saute briskly until translucent. Add the red chilli powder.

  6. 6

    Add the garam masala powder, saute briskly.

  7. 7

    Add the garlic-tomato puree, saute.

  8. 8

    Add the schezwan and hot and sweet sauces. Saute.

  9. 9

    Add salt to taste and the oregano seasoning.

  10. 10

    As the tomato puree starts to leave the sides of the pan, add 1/4th cup of water, mix & cook for 30 seconds.

  11. 11

    Add the cooked and cooled pasta. Gently mix and cook in till the tomato sauce coats it well.

  12. 12

    Adjust the salt. You can add more hot and sweet sauce too if you wish. Cook for a minute, take off heat.

  13. 13

    Serve topped with some grated cheese and a sprinkling of oregano seasoning.
