Place a pan on medium heat, when hot, add oil, add garlic, onions and stir fry until onions are slightly brown, add mixed vegetables, seasoning, paprika, mustard, cover and cook for around 5-8 minutes, turn heat off.

In a blender, add cashews and almond milk mix and blend to a coarse paste. In a large bowl, add, cashew paste, vegetables, almond milk, nutritional yeast and mix until well incorporated. Check for seasoning, add macaroni and mix well, place in pre-heated oven @ 180 degrees Celsius, bake for 20-25 minutes until the top is slightly toasted. Enjoy with a side of salad.
