First, heat a generous splash of olive oil in a skillet and sauté the onion. When it starts to turn translucent, add the garlic cloves and cook until fragrant.

Transfer the sautéed onion and garlic to a plate. In the same oil, add the chorizo slices and cook for a couple of minutes, stirring occasionally.

Add the jar of tripe with chickpeas and stir in the rice. Cook for a few more minutes, stirring.

Return the onion and garlic to the pan. Add the beef broth, white wine, and a pinch of salt.

Let it rest for 5 minutes, then enjoy.

Cook for the amount of time recommended on the rice package.
