Ingredients

30 minutes
Serves 2 to 3 people
  1. 1 jartripe with chickpeas
  2. 6-8 slicesSpanish-style chorizo sausage
  3. 1onion
  4. 2 clovesgarlic
  5. 1 cupbeef broth (about 240 ml)
  6. 1 cupwhite wine (about 240 ml)
  7. 1 cupshort-grain rice (such as bomba, about 200 grams)
  8. olive oil
  9. salt

Steps

30 minutes
  1. 1

    First, heat a generous splash of olive oil in a skillet and sauté the onion. When it starts to turn translucent, add the garlic cloves and cook until fragrant.

  2. 2

    Transfer the sautéed onion and garlic to a plate. In the same oil, add the chorizo slices and cook for a couple of minutes, stirring occasionally.

  3. 3

    Add the jar of tripe with chickpeas and stir in the rice. Cook for a few more minutes, stirring.

  4. 4

    Return the onion and garlic to the pan. Add the beef broth, white wine, and a pinch of salt.

  5. 5

    Let it rest for 5 minutes, then enjoy.

  6. 6

    Cook for the amount of time recommended on the rice package.
