Horchata Pudding

I made this pudding and it turned out delicious. It's a great option for people who can't have milk—the horchata works as a substitute and gives it a wonderful flavor. It makes an excellent dessert.

Steps
- 1
Heat the horchata, reserving a little to dissolve the pudding mix packet.
- 2
Once the horchata is hot, add the dissolved pudding mix and stir constantly until it comes back to a boil (follow the packet instructions as if using milk).
- 3
Pour into a dish, jars, or directly into serving glasses. Let cool, then refrigerate for about four hours, until set.
- 4
When ready to serve, sprinkle with ground cinnamon and add some wafer cookies on the side.
