Vegetable Croquettes
Steps

Grate the boiled potatoes and all other ingredients too in a bowl (except oil).

Adjust salt and mix all the ingredients except oil.

Make a slurry by mixing maida and Water
Take bread crumbs in a plate and keep aside. - 4
Now make small croquettes from the mix and dip them in slurry one by one and roll them on the bread crumbs. Keep them in a separate plate and place them in refrigerator for 15-20 min before frying.

For frying-
Now take an appe pan and keep it for heating
Grease the cavities. - 6
Once it’s hot place the croquettes for frying on low flame.
Keep the flame low for nice crispy outer skin. - 7
Turn them once one side is done.
Repeat turning to get the all-round crispy crust. - 8
Once done take them out and serve them with your favorite chutney or ketchup.
