This dish is perfect for parties or Tet (Lunar New Year) celebrations. It's crispy and delicious, just like traditional chả giò (Vietnamese spring rolls).

Finely chop all the ingredients above and mix them with the ground pork, green onions, black pepper, and shiitake mushrooms. The shiitake adds great flavor and aroma, so don't skip it. Place the sandwich bread on a cutting board, trim off the crusts, and use a rolling pin to flatten each slice. Add some of the meat mixture and roll it up like a spring roll.

Once all the rolls are made, heat a nonstick skillet and add about 1 small cup of oil. Don't use too much oil since you'll be baking them later. If you prefer, you can deep-fry them, but I use less oil and finish them in the oven to keep them lighter. Beat the eggs, then dip each roll in the egg and coat with panko breadcrumbs.

Place each roll in the skillet and fry over low heat just until lightly golden. Then, bake at 340°F (170°C) for 10 minutes. Enjoy your crispy chả giò sandwiches!
