Cooking noodles the same way each time can get really boring.... So decided to give it Meen's Twists.... And Alhamdulillah it's very yummy, visually appealing and perfectly cooked. I like my noodles very spicy, so if you are not on the same table with me just adjust the quantity of scotch bonnet. #boxmaking

Cube scotch bonnet, onion and carrots. Wash. Peel and cube potatoes. Wash and keep in fresh water.

Soak dried fish in hot water for some minutes to soften it n ease deboning process. Strain and debone it. Wash and set aside.

Measure out your oil and put in a big frying pan on medium low heat. Add in onion, scotch bonnet, carrots and dried fish. Sprinkle a pinch of ginger powder.

Add in noodle seasoning and spices (those in d noodle pack(s)). Stir fry for few minutes. Do NOT overcook or burn. Turn off heat source.

Meanwhile, boil water in a pot. Add in cubed potatoes and cook till almost tender. Add in noodles at this stage and cook for two minutes. Transfer to a colander hurriedly and strain.

Return frying pan with sauce on medium low heat. Add in semi cooked noodles and stir fry. Turn off heat source.

Serve immediately. I garnished mine with medium soft boiled eggs.
