Nutritious, no added sugar, good for a pre/ post work-out snack or snack in general. This recipe should make 6 to 9 balls - depending on the size you choose. Dates and raisins are used for sweetness and to let all elements stick to each other. You can leave-out or add-in any ingredients except the dates - they are the base of these snack balls.
Vegan Healthy Bites, Vegan Workout Snack
Nutritious, no added sugar, good for a pre/ post work-out snack or snack in general. This recipe should make 6 to 9 balls - depending on the size you choose. Dates and raisins are used for sweetness and to let all elements stick to each other. You can leave-out or add-in any ingredients except the dates - they are the base of these snack balls.
Cooking Instructions

Blend all the ingredients together in a blender till a sticky paste like consistency is achieved. Note (1) use only 1/2 cup of desiccated coconut at this point, keep remaining for later. Note (2) remove pits from the dates before putting into blender.

After achieving sticky nutty paste like consistency, using your clean hands, take a small portion and roll into balls. Note (1) if you want to hide the vegan chocolate cubes as a surprise, slip them into few of these balls now. Lastly roll the balls in the left over desiccated coconut and it will beautiful stick to the exterior of these balls.

I thought about making sweet potato bites that I could eat even when I'm on a diet. Because I didn't add egg yolks, the color was off, but it improved dramatically when I added kabocha squash.Please adjust the amount of milk according to the amount of water in the sweet potatoes and kabocha. These aren't very sweet, but you could increase the amount of sugar if you like. Steaming the sweet potatoes will make them sweeter than microwaving, so I recommend steaming. This recipe is packed full of both quick and sustained energy for a convenient grab and go breakfast or pick me up snack.It is very adaptable. I like to make with chopped macadamias, hazelnuts, almonds, cashews, pepitas, sunflower seeds, and sesame seeds. I've also added cacao nibs. Whatever I have in pantry. For fruit I like to use cranberries and raisins but is fun to try different variations.The final bars can be a little crumbly, depending on the mix, so we keep in the freezer and they are best when eaten straight away, without thawing. I'm just recently jumping on the energy bite bandwagon and this is a recipe I concocted based on a mix of my two favorite cookie flavors (peanut butter and oatmeal raisin). The recipe is versatile though and there are tons of add in's and substitutions that can be used. For the sticky sweetener/binder you should have 1/3 cup total, so you could use agave instead or use all honey. Maple syrup may not bind well completely on its own. Christina -
