People of Tamil origin all over the world celebrate Bogi –first day of Sankaranthi. Day starts with a bonfire when kids have a gala time throwing old things into fire. It is symbolic of getting rid of evil or saying “good Bye” to old. Old order changes yielding place to new. However, we keep old traditions alive by celebrating the day just as our ancestors did for centuries, cooking the items of old days. Poli is one such dish, I decided to make Paal poli-soaking Poori in milk. My dish is little different from how most people make in Tamilnadu. I use almond milk, add nuts and saffron. “Bogiyo bogi”#book

Ingredients

about 40minutes
6-8 servings
  • 2 call purpose flower
  • 1 tspsugar
  • 1 cmilk
  • Oil as needed for frying
  • 6 cAlmond milk (store bought)
  • 1 cbrown sugar or sugar
  • A fewsaffron threads
  • 1 tspCardamom powder
  • 1 tspnutmeg freshly grated
  • 1 tspAthimadhuram (Tamil) “Liquorice root” in English, freshly grated
  • 1/4 cPistachio-coarsely powdered
  • 1/4 ccashews, coarsely powdered

Steps

    Make the dough in a bowl, add milk to flour plus sugar little by little, and knead to make a smooth shiny ball. I usually make a snake out of it; cut it into small pieces, about 10. Each piece makes a small ball. Roll the ball to make small poori. Fry one by one in hot oil in a heavy saucepan over high heat. Place puries on a paper towel to remove excess oil. transfer the puries to a plate

    In a heavy saucepan over medium heat, heat almond milk about 10 minutes. Add sugar. Stir in saffron, cardamom and Athimadhuram. Turn off the heat. Soak puries in hot almond milk or milk. Sprinkle powdered pistachio and cashews. Let Pall poories soak at room temperature for 30 minutes.
    Serve hot or cold
