Collect all the ingredients, prepare and cut to size then put to boil in salty water (so that it's absorbed in) for about 10 minutes or until soft. (Don't let them be too soft that they break).

In a bowl prepare your marinading mix. Onions+coriander+capsicum+soy sauce+vinegar+parsley+cooking oil and any other of choice. Stir for a perfect mix.

When the potatoes mix is ready, let it cool for about 3 minutes then add to the marinade mix. Cover for about an hour.

After the hour, heat a sauce pan, lace it with little oil so it doesn't stick when frying. (If you have a small pan fry them in bits so each piece gets enough heat). When it's satisfactorily dried remove from heat and serve with stew, veges or tea.
