Hummus stuffed chessey mushrooms

Mushroom is one of my favorite vegetables. It has an unique tastes called unami and vitamin The. Hummus is a Middle Eastern dish prepared with chick peas. However I made hummus with black-eyed peas. Members of bean family provide the protein that vegetarians need; however they have a compound called lectin that is not good for our health, When cooked in a pressure cooker, lectin gets destroyed. I cooked the black eyed peas in a pressure cooker, made a paste with ginger and garlic in a blender. I added this to sautéed onions to make it thicker, spiced, salted, and cooled to room temperature. Removed the stalks from mushrooms, cleaned the head thoroughly, stuffed with hummus, sprinkled cilantro on the top. I arranged them neatly on a microwave safe plate. I covered the hummus with shredded cheese, micro waved until the cheese melted. Let it cool. It makes an excellent side dish. #goldenapron3 #ebook

Use mushrooms that are fairly big, the head should be at least 2 inches in diameter. Remove the stalk, clean the cavity. Using a baby spoon, stuff the mushrooms. Arrange them neatly on a plate, sprinkle chopped cilantro on the top

Cover the stuffed mushroom with shredded cheese. Cook in the microwave oven, until cheese melts-about 5-8 minutes. Cool to room temperature. Cheesy hummus stuffed mushrooms are ready to serve.
