Thought I'd give a Crockpot loaded potato soup a try since I work long hours and am famished when I get home! Plus, most recipes call for a roux to be made, I wanted simplicity! This turned out great! My boyfriend devoured 3 bowls! VERY EASY AND QUICK to set up! I got inspired by a few recipes and added my own little spin. Enjoy!

My family LOVES potato soup and this super easy recipe is their favorite. No one ever believes it is hash browns. I've made this recipe with peeled and diced russet potatoes and no one could tell the difference, so I don't spend the time to peel and dice any more! It takes two minutes to throw it in the crock pot.
