Peel and devein the shrimp, then finely chop. Mix with ground pork and diced squid. Add 1 teaspoon seasoning powder, 1/2 teaspoon MSG, 1 teaspoon oyster sauce, chopped onion, and diced jicama. Mix everything together, then wrap the filling in spring roll wrappers and fry until golden brown.

To fry the spring rolls: Heat oil, add a squeeze of lemon juice, and fry the spring rolls until crispy and golden. Next, make the dipping sauce: Mix 4 tablespoons fish sauce, 1 cup water, 2 tablespoons sugar, a squeeze of lime juice, and chopped chili to taste. Adjust the flavor to your liking.

Lightly fry the pork chops and toss with scallion oil. Serve with fresh herbs and peanuts.
