Spinach bread is made with cooked spinach spread on the bread dough sheet and rolled gently to make a roll and bake.

In a small bowl add lukewarm water (just enough warm that u can put your finger in) add yeast and sugar and give a nice stir and keep aside for 10 mins. Then once it bubbles add this to the flour bowl and add salt and oil and mix...(or you can simply just add all the dough ingredients together and make a dough)add more water if required to make a soft dough.... apply some oil and cover with a plastic wrap and keep in a warm place for 1-2 hrs.

Meanwhile wash and clean the spinach and finely chop them.. in a pan heat oil and add chopped garlic saute then add chopped onions and fry till it's translucent. Then add the chopped spinach, sprinkle some salt and pepper and let it cook in it's own moisture... lower the flame.

Once the spinach is cooked increase the flame and let the water evaporate. Keep aside to cool.

After 2 hrs the dough will rise and become double in size... punch and knead the dough once again.. roll to a big roti.... spread the spinach, add grated mozarella the gently roll and twist to hive a shape like in pic. Bake at 180°c for 20 mins in a preheated oven.

Cut slices and serve hot or cold.
