Chop the lettuce, apple, ham, hard-boiled eggs, and celery. Grate the carrot. Combine everything in a bowl.

For the vinaigrette, finely chop the parsley. Add the olive oil, apple cider vinegar, lemon juice, mustard, honey, salt, and pepper. Mix well.

Top the salad with shredded cheese and pour the vinaigrette over it. Serve.
