A One lonely cauliflower was looking at me in my kitchen . Wanted to be cooked . But different way. I searched little bit , and ended up with this. Key is here, make sure you have enough 3-4 cups of cauliflower "snow rice" . I didn't have enough , I ended up adding 1/2 cup home made some almond meal.

Ingredients

  • 1medium cauliflower
  • 1egg
  • 1tomato + 1 tbsp tomato paste
  • 1/2 cupshredded Parmesan
  • 1/4 cupshredded mozzarella
  • Kosher salt
  • Black pepper
  • 1/2 tspOregano
  • 1/2 tspdry basil
  • 1 tbsOlive oil

Steps

  1. 1

    Wash and cut florets of cauliflower. In a blender make them snowlike texture. Set oven to 425 degrees

    In a microwave safe dish cook for 4 mins. After they are cool enough to handle, transfer them to a cheesecloth or dish towel. Squeeze out the water. Do this step very carefully, you don't want your pizza mushy

    In a baking tray or pizza stone line baking paper, silicon mat and spray lightly with oil.

    Mix cauliflower, cheese, egg, spices and line mixture into the baking dish. Bake about 20-25 mins.

    After you decorate the crust with sauce, cheese and other veggies. Put it back to the oven for 15 mins. Or until it get crusty.

    Very tasty. Play with ingredients for your own taste. (basil will go great)

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
