This evening I charged my youngest students with making the lowest calorie, lowest carb and lowest fat meal they could think of. However, it had to be high on flavor. The dried herbs definitely took care of that! Anyway, a long story short - THEY NAILED IT!

Seasoned chicken cubes cooked in a T-Fal Air Fryer [with 1 tbsp oil to 2 pounds of chicken cubes] and a flavorful baked vegetable melody! Per serving, each delicious dish is less than 400 calories with a side. Excellent work kiddos!

Ingredients

4 servings
  1. ● For The Vegetables
  2. 1LG Red Onion
  3. 1LG Vidalia Onion
  4. 1Red - Green - Yellow - Orange Bell Pepper
  5. 1Each: Green & Yellow Zucchini
  6. Fresh Garlic [left whole]
  7. 1/2 CupFresh Parsley
  8. 1/4 CupFresh Basil
  9. 1/4 CupSun Dried Tomatoes [in oil]
  10. 1 CupWhite Wine [chardonnay]
  11. to tasteSalt
  12. to tasteFresh Ground Black Pepper
  13. ● For The Low Fat Chicken
  14. 2 PoundsChicken Breasts [trimmed - 1" cubed]
  15. ● For The Chicken Marinade
  16. 2 tbspGarlic Olive Oil
  17. 1 tspDried Basil
  18. 1 tbspDried Parsley
  19. 1 tspDried Italian Seasoning
  20. 1/4 tspCrushed Bay Leaves
  21. tip taste Fresh Ground Black Pepper
  22. to tasteSalt
  23. 1 tbspGarlic Powder
  24. 1 tbspOnion Powder
  25. ● For The Sides
  26. Thick Sliced Chilled Tomatoes

Cooking Instructions

    2 Pounds chicken breasts pictured.

  2. 2

    Cube breasts in to 1" cubes and rinse under cold water. Pat dry and marinate in seasonings for 1 hour.

    Chop all vegetables and season. Add white wine. Mix.

  4. 4

    Seal tightly and bake at 375° for 45 minutes.

    T-Fal Air Fryer

  6. 6

    Just add 1 tbsp oil and chicken. Cook for 20 to 25 minutes.
