Ingredients

  • For chana-
  • 1 cupwhite chana
  • 1/4 cupchana dal
  • 6-7garlic cloves
  • 3-4tomatoes
  • 1 inchginger
  • 1 teaspoonamla powder
  • 2 tablespoonoil
  • 1 teaspooncumin
  • 1 inchcinnamon stick
  • 2-3cloves
  • 5-6black pepper
  • 2 teaspoonchana masala
  • 1 teaspoonDegi mirch
  • 2 teaspoonsdry coriander powder
  • 1/4 teaspoonfenugreek seeds powder
  • 1/2 teaspoonfennel powder
  • 2whole red chillies
  • to tasteSalt
  • For bhatura-
  • 2 cupsrefined flour (maida)
  • 1/4 cupsemolina (Suji)
  • 1/2 teaspoonbaking soda
  • 1 tablespoonoil
  • 1/4 cupcurd
  • 1/2 teaspoonsugar
  • 1/2 teaspoonsalt
  • as requiredLukewarm water for kneading dough
  • as requiredOil for frying

Steps

  1. 1

    Wash chana and chana dal and soak overnight.

    In the morning take a cooker and put soaked chana, amla powder and salt and pressure cook it for 20 minutes on sim after first whistle on high flame.

    Grind ginger, garlic and tomatoes in a mixer. Take a pan, add oil and sauté dry ingredients now add ground masala in it, fry till it leaves oil. Now add chana masala sauté it mix it in boiled chana & cook for 5 minutes.

    For bhatura dough, mix all the ingredients and make a smooth dough using lukewarm water and rest if for at least 2 hrs.

    Make balls of dough and roll it and fry in oil.

    Serve bhatura with chana and onion green chilli and mango pickle.
