Sweet Ragi Adai (patties)

Ragi was Mahatma Gandhi’s favorite grain. Sweet ragi adai is one of my favorite ragi dishes. I made the dough for adai with sprouted ragi flour, brown sugar and coconut. In boiling water brown sugar was dissolved, Added cardamom and small pieces of coconut. I stirred ragi flour little by little to avoid lumps and make soft dough. Made small balls, flattened each ball on a parchment paper to make the pattie. I cooked both sides on a greased skillet over medium low heat. I use heavy cast iron skillet that retains heat. Easy to make nutritious sweet patties take very little time and energy. Brown is beautiful. #rainbowweek2

Make a checklist. Collect the required ingredients, keep them within your reach

Boil ½ cup of water. Add a tsp of butter, brown sugar, coconut pieces and cardamom, stir in to dissolve the brown sugar. Turn off the heat. Stir in ragi flour little by little to avoid lump formation. Make smooth soft dough. Make small dough balls. Grease a parchment paper. Flatten the balls to make patties. Do not make it thin

Keep a skillet over medium-low or low heat. Transfer the pattie from the parchment paper to the skillet. Cover, cook both sides. You may rub butter on the upper surface.
Taste before serving to make sure that the patties meet your approval
