We’ve made this recipe before, but this time it’s prepared with lime juice and white vinegar. You’ll need some red onion, habanero pepper, lime, bay leaves, white vinegar, and salt.
This salsa is perfect for fish or battered shrimp tacos, or for cochinita pibil. It’s commonly known as Salsa Xnipec or pickled onions.

Slice the red onion into thin strips and place them in a bowl with hot water for 5 minutes to help them pickle faster.

Drain the water, then add the chopped habanero pepper, salt, oregano, and bay leaves.

Pour in the vinegar and lime juice over the onions, making sure all the onions are fully covered.

Refrigerate the pickled onions for 24 hours. You can eat them after 6 hours, but the flavor improves the longer they sit.

Enjoy them on tacos or however you like.
